Two-time James Beard Award-winning Chef-Partner Guillermo Pernot has just added fourteen tempting new dishes to Cuba Libre's summer menu, including impressive platters for two, classic and contemporary Cuban tapas, incredible new steaks, seafood and Cuban clásicos, and hand-crafted cocktails.
Cuba Libre in The Quarter at Tropicana Casino & Resort has added twelve (12!!) new items to its dinner menu, including impressive platters for two, incredible new appetizers, and a bunch of classic and contemporary Cuban entrees.
Chef Pernot is thrilled to debut stand-out dinner items, among many others, such as:
- Crab Guacamole: Blue crabmeat, avocado, grilled golden pineapple, roasted jalapeños, fresh lime juice, extra virgin olive oil. Crisp plantain chips
- Grilled Provoleta: Oregano-marinated provolone cheese. Tomato compote, Serrano ham and roasted peppers. Grilled Cuban bread
- Puerco Cha Cha Cha: Three pork favorites in one jumbo cut: bone-in loin chop with meaty rib and crisp pork belly. "Boniato Bravas” and charred herb salsa. Chipotle allioli
- Crispy Pork Pata for Two: 48-hour slow-cooked Berkshire pork shank. Grilled seasonal vegetables and Moros y Cristianos. Citrus pan reduction (Limited quantity available)
The new lunch menu, available Friday, Saturday and Sunday beginning at 11:30 a.m., features breakfast items like the Ham & Egg Sandwich and Cuban Omelet; soups, salads and sandwiches; and classic Cuban entrees like the Pargo a la Plancha or Vacio Steak Argentino.
