Cuba Libre Restaurant & Rum Bar in The Quarter at Tropicana Casino & Resort is giving guests four opportunities to celebrate Valentine’s Day with dinner specials available Saturday, February 11 through Tuesday, February 14. Regular a la carte dinner and cocktail menus will also be served.

Valentine's Day Specials include:

• Crab Guacamole, blue crabmeat, avocado, grilled golden pineapple, roasted jalapeños, fresh lime juice, extra virgin olive oil, and crisp plantain chips
• Provoleta, oregano-marinated provolone cheese stuffed with Serrano ham and roasted peppers. Tomato compote and grilled Cuban bread
• Beef Jibaro, 16 oz. salmuera-rubbed center prime cut rib eye steak. Boniato asado and grilled broccolini. Cuba Libre steak sauce
• Pargo a La Plancha, olive oil griddle Florida-red snapper fillet. Coconut-basmati rice and candied cashews. Tamarind-lemongrass sauce

Executive Chef Kevin Couch recommends pairing Valentine’s Day dinner with a cocktail special such as the Mi Amor Martini, mixed with amaretto and mango vodkas, pineapple juice, spash of Coco Lopez and grenadine; or the after-dinner drink for two, the Lover's Duo - a snifter of Brinley's Coffee Rum served alongside an unsweetened Cuban espresso and chocolate-covered coffee beans.

Those celebrating Valentine’s Day can end their romantic dinner on a sweet note with Cuba Libre’s Dessert Trio for $9, our pastry chef’s choice of three traditional Cuban desserts.
